Other than the beautiful colours of the changing leaves, autumn makes me most excited for the cozy meals. And what better way to start the day or a weekend brunch than with a warm bowl of porridge. It not only leaves your hunger in check but it's also really easy to make leaving you with no excuse to skip breakfast. This combination is perfectly spiced for the season with delicious flavours of cinnamon and ginger.
- 1 cup cooked brown rice
- 1/2 cup coconut or almond milk
- 1/2 granny smith apple shredded
- 1 tbs coconut oil
- 1 tsp cinnamon
- 1/2 tsp maca powder
- 1/2 tsp powdered ginger
- pinch of himalayan salt
[1.] Rinse brown rice in a strainer and cook according to instructions. Add coconut oil into the boiling water (this will help to make the rice creamy).
[2.] Once rice is ready, pour in coconut milk, cinnamon, ginger, maca powder, & himalayan salt and mix well.
[3.] Cook on medium heat & stir intermittently until all the milk has evaporated.
[4.] Mix in shredded apple. Top with granola crunch and a spoon of coconut yogurt. If you prefer a sweeter taste, you can also add in a bit of maple syrup or honey. You're ready to enjoy!
Make a big batch of brown rice and store in an airtight container in the fridge for the next days. In your mornings, simply add the one cup into a pot with the milk & it will all be ready in a few minutes.
You might be thinking that brown rice is not the norm as a breakfast dish and you're right it's totally not. But don't judge it until you tried it! Brown rice is packed with fiber, magnesium, and tons of nutritious vitamins so it is a great food item to start the day with.
